St. Patrick’s day dinner

I cooked corn beef and cabbage for St. Patrick’s day and it came out rather well. I used the following recipe;

1 onion cut into wedges

1 lb. of carrots peeled and cut into one inch pieces

5 potatoes peeled and cut into chunks

1 Bay leaf

1/2 of the seasoning packet that came with the corned beef

1 Corned beef 3-4 lbs

1/2 tsp of black pepper

Cabbage wedges of one small cabbage

1 cup of apple vinegar

Place the corned beef fat side down in a crock pot cover with the ingredients and add water to cover the veggies, cook for eight hours. Remove the corned beef from the pot and let stand to make it easier to slice and keep the veggies warm by reducing the heat in the pot.

I also made homemade biscuits and even bought my own rolling pin. I had a great time making the dinner; it is fun cooking for more than one šŸ™‚

The dinner was a family affair with lots story telling and a few glasses of stout beer to top of a nice St. Patrick’s day at home. Lots of left overs for lunch and maybe some corn beef hash later šŸ™‚
